Best Pancakes!

When I was a child we had a Saturday morning tradition of having pancakes and rootbeer for breakfast. My dad even used to make maple syrup and rootbeer from extracts that my aunt would bring us when she visited from the US.

Lexi LOVES Saturday morning pancakes too.
But in our house it's more of a monthly thing! It's nearly impossible to cook or bake without Lexi getting involved. I get her to measure out ingredients, which is a great way of teaching little kids fractions and other crazy maths skills that they don't usually learn at such a young age. 

We are making a huge effort to eat gluten free which meant I had to change my pancake recipe. I finally got it right! The result was huge, fluffy, yummy pancakes.

Without further ado.......

Fluffy Gluten-Free Pancakes

Prep time: 10 minutes
Cook time: 10 minutes
Total time: 20 minutes
Yield: 4 pancakes

Ingredients

3/4 cup milk
2 tablespoons white vinegar
1 cup spelt flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 egg
2 tablespoons melted butter
1 or 2 teaspoons coconut oil for frying

Cooking Directions

Combine the milk and the vinegar and set aside while preparing the other ingredients. It will begin to go lumpy and sour, that's when you know it is ready to use.

Combine all the dry ingredients.

Whisk together the egg, soured milk and butter, then combine with the dry ingredients. Make sure you whisk out all the lumps.

If the mixture is still a bit stiff you can add a tiny bit of water until it reaches the right consistency (it should still be thick).

Melt the coconut oil in a pan and pour in approximately 1/4 cup of batter. I prefer to use a soup ladle for less mess and slightly bigger pancakes.

Cook until there are bubbles on the surface, then flip. Cook until browned on the other side.

My favourite topping is a dollop of butter and loads of maple syrup. But, I'm trying to set a good example for Lexi, so we usually top ours with fruit (sometimes jam) and yoghurt. What's your favourite pancake topping?
